Last Sunday, the skies decided to open up and pour on us! But I have to say I love rainy weekends: I get a chance to snuggle up to a good book/movie and tuck into some comfort food!
I have to say, mac and cheese with some crusty bread (I know carb-fest!) is my idea of comfort food! My family, however, thinks mac and cheese is too bland to eat as a meal (what?! how we share DNA, I do not know). So to keep the peace, I decided to spice things up with with fresh jalapenos, Monterrey jack cheese , and cayenne pepper. The results were amazing...I'm already craving another bowl!
1 package pasta
1 small red bell pepper - finely chopped
1 small onion or 1/2 a purple onion - finely chopped
1 fresh jalapeno - finely chopped
3 cloves garlic - minced or shredded
3/4 cup chopped green onion
3/4 cup cheddar cheese - freshly shredded
3/4 cup pepper jack cheese - freshly shredded
1 tbs flour
3 tbs olive oil
3/4 cup milk
1/4 cup heavy whipping cream
2 tsp cayenne pepper
2 tsp garlic powder
2 tsp black pepper
2 tsp cumin
In a medium saute pan heat olive oil. Add onion, bell pepper, jalapeno, and garlic. Cook on medium-high until onion is transparent (usually 3-4 mins).
Reduce heat and add flour. Mix well with pepper mix.
Add milk and whipping cream. Stir till smooth. Simmer on low and let sauce thicken.
**At this point you want your pasta cooked (quick tip about boiling pasta - add a lot of salt (think beach salty) - the added flavor will blow your mind!)**
Add green onion and spices to sauce and stir well.
Add cheese. Stir until smooth.
Add salt to taste.
